Understanding Carbs and Glycemic Load in Baking
Hi, I’m Amanda. Mom of three, caretaker of two dogs, a couple of cats, and a rotating cast of small, furry, feathered, or otherwise chaotic creatures. Life in my house is never quiet, rarely tidy, and always full of food.
I was diagnosed with celiac disease almost fifteen years ago, and like so many people, the news completely upended my world. As a biochemist by training and a lifelong baker at heart, I suddenly had to relearn everything I thought I knew about cooking. Family recipes I’d made for decades were suddenly off‑limits, and the early gluten‑free options… well, let’s just say they didn’t exactly spark joy.
So I rolled up my sleeves and got to work.
The kitchen has always been were I am happiest. I truly enjoy cooking and baking and making delicious food for my family from scratch. I’ve spent most of the last decade and a half experimenting, failing, trying again, and slowly rebuilding my favorite recipes from the ground up. Today, when I whip up a cake, cookie, or loaf of bread most people can’t even tell its gluten‑free... and that still feels like a tiny miracle every time.
Recently, my family has been challenged by Type-1 Diabetes. Again, this has changed so much for us. Fortunately, the same spirit and effort that brought us through the joys of learning Gluten-Free cooking are allowing us to adapt and work with this new diagnosis. Life is an adventure and EVERYONE should be able to enjoy a piece of cake.
Whether you’re newly diagnosed, cooking for someone you love, or just trying to make gluten‑free life feel a little more normal, I’m here to help you. This site is my way of sharing what I’ve learned through many years of experimentation to show you that cooking gluten free doesn't have to be difficult.
Welcome to Gluten Free and Easy.
Let’s make your new normal delicious.
